The school give us many opportunities for Work Experience, and indeed it is a requirement to gain your Diploma that you must experience a minimum of 3 work placements that includes working in a restaurant that has at least 50 covers.
One of these opportunities appeared a few months back that involved a student working at the incomparable Rick Steins Seafood Restaurant in Padstow. I, amongst most of the 96 students currently undertaking the 3 term Diploma course applied for this experience, and without utilising any skills on my part – it was a name out of the hat scenario – became the Chosen 1 ! (Actually there are 2 of us but I prefer to be the chosen one !)
At 8.30am, March 26th I am destined to report to Stefan Head Chef at the Restaurant, for my first shift. I am told to bring all my knives – Chefs do not share Knives ! – my Apron Chefs jacket etc for a 5 day whirlwind of who knows what in the kitchen.
It will be my first time working in a professional kitchen so unsure what to expect – excited, nervous, but very thankful for the opportunity of training under a wonderful Chef in a world class restaurant.
